Since 1994 Pedro Olivares has been consulting for one of the most important Andalusian- Spanish wineries, Toro Albalá, located in Aguilar de La Frontera (DO Montilla-Moriles) near Córdoba. He had always wanted to make a special FINO PASADO dry wine. After months of tasting hundreds of barrels of Fino he found two special abandoned 500ltr barrels
