Domaine Chamonard, Morgon Les CLos de Lys 2015
A thermoregulated cold pre-fermentation maceration (macération semi-carbonique) is conducted at 4°C to 7°C without sulphur. This is followed by a 20-day maceration period. The wine is then aged for up to 10 months in used foudres and wooden barrels. Neither filtration nor fining is applied. The only sulphur addition is at bottling, amounting to approximately 20 mg/l. As you may know 2015 was a superb vintage, resulting in fruit-forward wines that leaned to the richer side. These bottles are ready now and drinking beautifully.
