Cotes Salines is made from Chardonnay, the average age of which is 30 years, from the village of Prehy. The mechanical harvest is followed by direct pressing, with cold settling and natural yeasts. Fermentation takes place in vats and the wine goes through total malolactic fermentation. Aging is carried out on fine lees for around 10 months.
Coming from a family of winegrowers and after having worked on her father's estate for 13 years, Celine decided in 2013 to become independent to create her own wines with her husband, Frederic. Originally from La Chapelle Vaupelteigne, a small village in Chablis, it was from an early age that Frederic was taken with a passion for the profession of winegrower. For her part, it was at the Jean-Marc Brocard family estate, where the winegrower grew up and worked, that Celine tasted her passion for the vine. Today it is their turn to follow each step of the viticulture! Their vinification aims to transmit through their wines the diversity of the Chablis terroirs. The key to obtaining great wines lies in the vineyard, which is why they devote all their energy to obtaining quality grapes, an essential condition for obtaining wines that will delight the taste buds.
