After being crushed, the grapes were cooled down and trodden by foot for four hours in granite lagares and then transferred to small refrigerated stainless steel vinifying vats. Each grape variety is vinified separately. All the wine was matured in French Allier oak barriques (225 litres). 80% new and 20% second usage.
In 1998, Francisco Javier de Olazabal decided to resign from his positions in the Sogrape Group, which in 1987 had acquired Casa Ferreirinha, in order to dedicate himself to the Quinta's wine launch project, under the responsibility of his son Francisco, who in 1991 had degree in Enology at the University of Tras-os-Montes and Alto Douro.
Since the first harvest – that of 1999 – two wines have been launched. Following the Bordeaux model, the top wine bore the name of the property, Quinta do Vale Meao and the name of the second wine was inspired by the geographical accident in which it is located, the Meandro do Vale Meao.
