Whole bunches pressed in basket press. Temperature controlled fermentation in 20hl foudres at 16 -22 degrees Celsius. No sulphur used and no chemical additives. The second fermentation occurs in bottle. Sur latte for 54 - 84 months. Released 6 months after degorgement.

Domaine Karanika, founded in 2004 by the wine-making duo Annette Van Kampen and Laurens Harman, transform the versatile Xinomavro grape into their enchanting sparkling Brut Cuvées. Their love of this grape led them to Amyndeo in northwest Greece where the temperate climate and unique soil composition reflects the conditions of the Champagne.  The winery works in tandem with nature, using gravity and pigeage instead of pumping. The ritualistic dedication of the craft is a nod to traditions of old - the méthode traditionnelle’ requires patience and reverence – nurturing the wines for months or even years. Bottles ageing for 24 months are cradled by hand, gently turned and rotated, encouraging the dormant sediment to settle, revealing the brilliance of the artistry. Karanika’s wines breath terroir, are crystal clear, intensely aromatic, and have considerable length on the palate. Having established themselves as the pre-eminent traditional method sparkling wine producers of Greece, they have gained considerable international recognition.
