50% Pinot Noir, 50% Chardonnay from the Cote de Bar with zero dosage aged partly in oak and partly in amphorae. Use of amphorae allows the wine to come in contact with oxygen in a gradual and controlled manner giving a perfect balance between fresh varietal character and rich, nutty oxidative notes.

Vinification of champagne takes place in ovoid terracotta amphoras, and the wine only benefits from the micro-oxygenation inherent in the porosity of terracotta. It allows wine to gain maturity and complexity, while maintaining its original purity. Aged for 24 months in four amphorae and bottled with no dosage.

Didier Gallimard owns 10 hectares of prime vineyards on the steep slopes around Les Riceys in the southern Aube. Didier's son Arnaud has joined him, becoming the seventh generation, and the long term future is now secure. His vines average age is over 30 years and the dramatically sloping vineyards, which are of chalk and Kimmeridgian limestone, are planted mainly to Pinot Noir and just a little Chardonnay. His wines are full and rich and offer enticing aromas and flavours of summer fruits. His rich exotic Rose is produced in very limited quantities. Cuvee Quintessence is 100% Chardonnay, aged entirely in old wood and with a dosage of just 5g/l. Rich, round and decadent. Cuvee Amphoressence is a blend of 50% Pinot Noir, 50% Chardonnay, aged for 24 months in four amphorae and bottled with no dosage. This is very fine and pure and rather serious.

Best of a top range

This is for me the best of the several cuvées I have tried - complex, rich and developed flavours, enhanced by partial storage in amphoras, producing a touch of very welcome oxidative notes to add interest. If, like me, you can't afford Selosse, then go for this instead!
