Pago de Tharsys is a 12-hectare estate based at Requena, some 70 miles inland from Valencia on Spain's eastern coast. The continental climate means that summers are hot and dry and winters are cold with occasional rains. This particular Cava is a blend of Macabeo, Parralleda and Xarel.O and fermentation takes place via Methode Champenoise before being aged in bottle for 16 months prior to release.
