Grapes are picked and sorted by hand. Fermentation is carried out in stainless steel tanks at controlled temperatures before 15 months aging on its lees. 85% of the wine matures in steel tanks, and 15% in secondary use oak barrels.
Located in the north western sector of Chablis in the village of Maligny, Pierrick Laroche runs this family estate which was established by his father in the 70s. After gradually gaining planting rights and slowly adding to the family vineyard holdings. Today, the current size of the estate is around 25 hectares. Having only sold grapes before, in 2010 Pierrick produced his first vintage and to great acclaim.
